In an effort to support everyone's health and well-being, this course will be held as an interactive web-cast session via ZOOM. Students will have ample opportunity to participate, ask questions, and connect with one another in this virtual delivery method.
Traditional Diets and the Modern-American Diet: This class will focus on the hunter-forager diets of indigenous peoples and an analysis of those diets as compared to the modern-American diet and dietary recommendations advanced by federal agencies. Analyses of various wild foods will be presented and contrasted with marketed fruits and vegetables in North America. The 7 major nutrient deficiencies of the modern-American diet will also be reviewed.
